Frosted Christmas Krispies

As the end of the year approaches, the number of things to get done and places to go is steadily increasing!

Incredibly busy, but also incredibly fun :). This past weekend we had two different family Christmas gatherings so we decided to make some “Christmas” Rice Krispie treats. {Note: regular Rice Krispies are NOT gluten free, but they have a gluten free version that we used.}

 
 

Frosted Christmas Krispies
Prep Time: 1 hr
Yields: approx 20 “treats”

Ingredients:

 Krispie Treats {also on box}

  • 4 tablespoons butter
  • 1 10oz bag marshmallows {or 8oz strawberry + handful regular for pink}
  • 6 cups Gluten Free Rice Krispies
  • food colouring {we just used green for one batch since the strawberry marshmallows are already pink!}

Frosting

  • 1 stick butter
  • 2 tablesppons milk
  • 1 tablespoon vanilla
  • 3 1/2 cups powdered sugar
  • food colouring as desired

Directions:
I love Rice Krispies treats because they are so easy to make! Begin by melting the 4TBS butter in large pan, then add 1 bag marshmallows. Coat marshmallow with butter, stirring occasionally: melt until creamy. Next you can either stir the Rice Krispies into the pan or pour the marshmallows into a large bowl with the Krispies. I prefer the large bowl. Either way, mix completely, then dump into greased 9×13 pan and press until firm {we used parchment paper on top to keep from sticking.} Let cool completely, then flip out of pan onto parchment paper {it helps to run a fork around the edge first.}

Next use cookie cutters to cut out desired shapes. The extra edges can be pressed back into the main sheet since they are so sticky, which helps yield a lot more treats!

After Krispies are cut, mix ingredients for frosting and divide based on how many colours you’d like. We kept it pretty basic. Finally, frost & add sprinkles if desired!

 

 
 

I love how they turned out… and the strawberry ones taste incredible! To transport our treats we layered them on a plate with the leftover parchment paper, added plastic wrap, and them placed the plate in our “cake carrier.” It actually worked really well!
