Delicious classic four cheese ravioli with homemade gluten free pasta dough

Ingredients
Pasta Dough
2cupsPamela's Artisan Blend flour
1pinchsalt
1tspolive oil
2eggs
3/4cupwater
Filling
8ozRicotta cheese
4ozcream cheese
1/2cupMozzarellashredded
1/2cupProvaloneshredded
2tspbasil
Instructions
Place dough ingredients in bowl, and combine with hands. Knead until smooth.
Combine ingredients for filling, then set aside.
In a large pot, start to bring water to a boil on stove.
Roll out pasta dough to about the thickness of a coin. For the next part, we used our special pasta/pastry maker to cut and seal our raviolis. If you don't have one handy, use a pizza cutter or knife to cut dough into 2'x2" squares.
Next add about a tablespoon of filling to your cut shape (If you're using the square method, leave half of the squares for the tops!
With our pasta maker, we simply had to fold to seal. If using squares, press all four edges with a fork.
When all the raviolis are prepped, gently place in boiling water. They will rise to the top of the water when they are ready. {Time will vary based on the size, ours were around 5-8 minutes}
Top with your favorite spaghetti sauce, and enjoy!
