AD I am continually looking for new and healthy r AD  I am continually looking for new and healthy recipes to try out on this kids, so I was very excited to get the opportunity to create an easy family recipe for  @gortonsseafood with their Simply Bake Salmon! I wanted a dish that felt like it could work for either lunch or dinner and not be too heavy with its sides.  I ended up going with Mediterranean flavors, including sides of peppers and quinoa and a topping of feta cheese and tomatoes. 

I absolutely love how all the flavors turned out. Each ingredient complimented each other beautifully, and most of the kids even ate it as well (which is definitely a win with 6 kiddos!) We will definitely be adding this one to the meal planning rotation.

We’ve officially entered “birthday season” u We’ve officially entered “birthday season” up in here. We celebrated a cousin birthday last night, and over the course of the next month 5 out 8 of us have birthdays!! Hayden will be turning TEN in 10 days and shortly after we have Wes, then the twins who will unacceptably be four. Will’s towards the end of February. Not to mention all the other friends and family with birthdays too! This year the birthdays just hit especially hard as I look at how much all my babes have grown so fast. I can’t believe it’s almost been a decade since we had our first little sweetie! 😭

What are birthdays like for your fam? Do they seem to be clustered together or are they more evenly spread than ours!? 🥳
I’ve noticed a trend where some are becoming nea I’ve noticed a trend where some are becoming nearly hostile towards anyone who dares to “continue to share happy posts” when there are so many social/political issues that could be discussed. Last week I saw posts mocking those who shared their goals and optimism even after what happened at the Capitol.

I cannot speak for everyone, but I think there is a deep misunderstanding of people like myself who choose to mostly post “happy” content. I thought I would try and sum up where I am coming from:

First, it seems like maybe people don’t fully understand what I mean when I talk about being optimistic for the year ahead: I am under no illusion that certain things are going to get magically better because the dates on the calendar changed. I know it’s fully possible some of the issues we’re facing might even get worse...

✨ But I refuse to let life’s circumstances dictate my hope, joy, contentment, happiness ✨ 

I will not stop sharing what brings me joy just because the world is a dumpster fire around me. Quite simply: this is MY Instagram. I love taking pictures and sharing parts of our life. I love being able to display them on this platform in an artistic way. I do not, in fact, OWE anyone anything from my content.

While I actually care very deeply about many of the issues facing society today, I reuse to live my life consumed by them. There are so many incredible people who speak brilliantly on these topics, but Instagram is not the place I personally choose to have these conversations most of the time. 

I also genuinely hope I can be a sliver of light, encouragement, and positivity in a sea of darkness. I love following so many of the beautiful and uplifting accounts on here that speak life to me, and I hope I’m providing even of the fraction of that to those who choose to follow.

I will not live in strife and fear in every part of my life. Often times I am in fact holding back what I think in the midst of an issue because facts are continually evolving or I’m still trying to figure it all out myself. But I do hope I can be a voice of love and encouragement!
When we found out I was pregnant with the twins, I When we found out I was pregnant with the twins, I thought there would be a decent chance at least one of them would be a boy and Will wouldn’t be so outnumbered 😅👏🏼 Of course now William remains the only brother to 5 sisters, and I wouldn’t have it any other way 🥰 I love the bond these girls have, and that they’ll always have each other! ✨
#AD With six kiddos we are always looking for spe #AD  With six kiddos we are always looking for special ways to spend time with each child individually. Just One Board Game by @asmodee_usa has been such a fun way to connect with Hayden in particular. It is a collaborative style guessing game and easily brings out the laughs! And as her siblings get older, it will definitely be fun to play with everyone for game nights. I also love that it's super simple and easy to take on the go for road trips and play dates! It’s so hard for me to believe that in just unde It’s so hard for me to believe that in just under a month my babies will be FOUR 😭. It’s so cliche to talk about how fast it goes, but seriously I need time to slow down please 🙏🏼 I’m so grateful for my twinnies, and I hope they never quit wanting to give their mama all their snuggles 🥰
I can’t remember the last time I reintroduced ou I can’t remember the last time I reintroduced ourselves to the new faces around here, so the new year seemed like a great opportunity! 

I’m Kate, stay at home mama to six little sweeties. I absolutely love having them around on the day-to-day and am very grateful for homeschooling. I also love creating the pictures and memories I tend to share with you all 🥰 Outside of that, I don’t have time for other hobbies honestly 😅✌🏼

My amazing husband is Wes: we’ve been together coming up on 18 years now 🤭. Wes is one of the hardest working people I know, and I’m so grateful for everything he does for our family! 

Hayden, (almost) 10, is the sweetest soul who loves art, Harry Potter, and spending time with friends. The best big sis 👏🏼

Audriana, 7, is super silly and loooves kitties

Zoey, 6, is incredibly empathetic to those around her and hates too much attention (and at times the camera 😂)

William, 5, is constantly moving and talking 🤣. He loves dressing up as different characters every single day 🦸🏼‍♂️

Vivienne, 3, the absolute best hugger you will ever meet. This girl melts me every day with her sweetness. She’s already mastered Roblox to play with her older siblings too 🤯

Iowa winters ain’t got nothin on these kids 🌨 Iowa winters ain’t got nothin on these kids 🌨 We thoroughly enjoyed our little winter break with family time, games, sledding, and new Christmas goodies. 🥰 I’m not so sure the kids are ready to start up homeschooling again today, but it was the perfect break time for me at least 😅👏🏼 Now to try and finish out the school year strong! ✌🏼

2020 was not the year I was hoping it would be when we started, but I’m still so grateful for all that it has taught us and how graciously God has brought us through all the ups and downs. I’m not sure what 2021 has in store, but I’m determined to make it a great year regardless of the circumstances 🙏🏼

✨ When Wes told the twins we’d be having a little New Year’s Eve celebration, Harper immediately went to pick out her outfit and demanded a princess bun. Vivienne so far has been much more concerned about the snack situation 🤣👏🏼 I soo love their little personalities 🥰✨
AD I can’t believe it’s actually the last day AD  I can’t believe it’s actually the last day of 2020! I’ve been in major cleaning mode around here while we enjoy some time off homeschooling: I am so excited for the new year ahead! I know 2021 won’t be without it’s challenges, but I’m feeling pretty optimistic none-the-less. 

I’ve been really enjoying purging, deep cleaning, and organizing so many of our spaces. Nothing like that new book feeling ✨ The week i Nothing like that new book feeling ✨  The week in between Christmas and New Years always ways leaves me feeling a little *off* - The busyness of prepping for the holidays and everything else going on suddenly comes to a halt, then it just kinda feels like you’re just waiting for the new year to start. 🤷🏻‍♀️ Anyone else feel this way or am I just crazy!? 😅

This year I’m keeping myself occupied with cleaning and organizing projects while the kids enjoy their last few days of Christmas break... but as weird as it feels there’s also something kinda nice about the downtime with these cuties 🥰
#AD With New Year’s Eve coming up, @egglandsbes #AD  With New Year’s Eve coming up, @egglandsbest has asked us to come up with new fresh recipe ideas to share! I decided to create these fresh and flavorful #GlutenFree Egg & Veggie Tostadas: The warm eggs combined with sauteed veggies and tomatoes contrast perfectly with the cool salsa, lettuce, cheese and avocado toppings. When prepared with Eggland’s Best eggs, they also provide more vitamins D, E & B12 as well as less saturated fat than other egg brands!

Egg & Veggie Tostadas
6 eggs
2 tsp vegetable oil
¼ cup milk
½ tomato, diced
¼ cup red pepper
¼ cup green pepper
¼ tsp chili powder
8 Tostada shells
½ cup shredded lettuce
½ cup cheddar cheese
½ cup chunky salsa
1 avocado, sliced
 
Directions
1. Whisk together eggs & milk in a small bowl and set aside
2. Heat oil in skillet over medium heat. Add tomato, peppers, and chili pepper. Saute until peppers are soft (approx 5 min)
3. Pour egg mixture into skillet and stir carefully until eggs are cooked
4. Divide eggs & peppers evenly over tostada shells
5. Top with lettuce, cheese, salsa,  & avocado slices as desired.

It’s always so special to see their eyes light up when they see what they got! This year was extra special as Wes organized a Secret Santa between the kids and took them each shopping. The joy they got from giving to each other makes this mama’s heart so full!! 💗

In other news, the entire reason I was trying to take this pic: we finally got our mantle up!! 😍. We’ll only be able to enjoy our hung stockings for a few days more, but I’ll take it. Way to go Wes for finding this awesome reclaimed barnwood beam on Marketplace! I’m in love with how it all came together 🥰🎄✨🪔
Only 3 sleeps until Christmas Eve! Fun Fact: we op Only 3 sleeps until Christmas Eve! Fun Fact: we open presents with our kiddos on Christmas Eve morning! That evening is traditionally spent at my grandmother’s, and on actual Christmas morning we head over to my parents’ house! We basically have 2 full days of celebrating Christmas around here 🥰🎄✨
